Zucchini Muffins

One of the things I like to teach my clients is how to prep good, healthy foods in bulk to maximize your results and make it "easier" to eat healthy than it is to eat unhealthy.

Zucchini Muffins are a great way to make sure you are getting your vegetable servings (as well as your protein and some good healthy carbs to).


  • 4 Egg

  • 2 tbsps Unsweetened Applesauce

  • 3 Cups Zucchini (shredded zucchini, peeled before shredding)

  • 1 tsp Vanilla Extract

  • 1/4 cup Maple Syrup

  • 1 1/3 cups Quinoa

  • 2tsps Baking Powder

  • 1/4 tsp salt

  • 2 tsp. cinnamon

  • 1/4 cup Vanilla Protein Powder (JayLabPro Recommended)


  1. Blend eggs, applesauce, shredded zucchini, vanilla and maple syrup until smooth

  2. Once the batter is smooth, add in the quinoa, baking powder, salt, cinnamon and vanilla protein powder.

  3. Blend until smooth

  4. Spray non-stick cooking spray into a muffin pan, pour the batter into the tins

  5. Put into the oven for about 20 minutes, until muffins are pulling slightly from the side of the pan, and tops are browned.


  • If desired, drop blueberries, peeled and cubed apples, etc., into batter or match batches, by adding nuts or fruit
